For those of you who have many questions, let’s get a bit more technical. Ice cream pasteurization is split in several steps. It starts with preparing the mix – combining milk, water, fats, sugar, stabilizers, and emulsifiers in a tank. This mix is then pre-cooled to 55°C and transferred to a holding tank. In the heating stage, it is warmed to 76°C using heat from an already pasteurized mix, which simultaneously cools down.
The homogenization process follows, where the mix is pressurized to break down fat molecules, which ensures a smooth texture. Then, in the pasteurization phase, the mix is heated to 85°C and held steady to ensure uniform pasteurization.
In the final cooling stage, the mix is gradually cooled down first to 64°C, then to 34°C, and lastly to 4 to 6°C, readying it for aging. The mix is stored in aging vats for about 6 hours before being used for ice cream production.
