The TEKNOMIX BATCH is a pasteurisation system that is ideal for small or medium-sized producers of ice cream.

CAPACITY available:
- TEKNOMIX 300 Batch: 300 litres/hour
- TEKNOMIX 600 Batch: 600 litres/hour
- TEKNOMIX 1200 Batch: 1200 litres/hour

Different capacities available upon request.

OPERATION PRINCIPLE

Preparing of the mix
Ingredients such as fresh or powdered milk, water, vegetable or animal fats, sugar, stabilisers and emulsifiers are introduced in the first batch pasteuriser/mixer. Water required to prepare the mix is sent to the selected tank according to the quantity set on the volume meter.


Pasteurisation
The heating system supplies hot water, which, through the circulation pump, is sent to the water jacket of the selected tank in order to reach pasteurisation temperature of 85°C.


Homogenisation
Once the pre-set pasteurisation temperature has been reached, the mix is sent to the homogeniser via a centrifugal pump, which, given its high pressure of 200 bar reduces the fat globules into tiny particles to prevent fat separation and to obtain an excellent structure of ice cream.


Cooling
From homogenisation, the mix directly moves on to the first section of the heat exchanger where it is cooled with water from the cooling tower at 34°C. It then passes through a second section where it is cooled further with ice water in order to obtain the final temperature of 4/6°C of the mix. The mix is automatically sent to maturation tanks where it will stay for approximately 6 hours before it is ready to use for ice cream production.

The time required to complete the mixing and pasteurisation process is approximately two hours. Since the system is furnished with two batch pasteurisers, the volume per hour is equivalent to the capacity of one of the batch pasteuriser tanks. In fact, while the first pasteuriser is filling and being taken to the set temperature, the second one has already reached pasteurisation temperature, thus triggering a continuous work process by alternating between the two batch pasteurisers.
